These cookies are ideal for when you don’t have eggs or butter, you can whip up a batch of them easily and quickly!

Vegan Chocolate Chip Cookies

This recipe makes 12 large or 24 small cookies.


  • 3 cups blanched almond flour. You can use ground almonds if you can’t find almond flour
  • ½ teaspoon sea salt
  • ½ teaspoon bicarbonate of soda
  • ½ cup chopped pecans or other nuts (optional)
  • ½ cup cold-pressed organic safflower oil
  • ½ cup rice or maple syrup
  • 1 tsp. vanilla extract
  • ½ cup grain sweetened dairy free chocolate chips


  1. Combine dry ingredients in a large bowl.
  2. Stir together wet ingredients in a smaller bowl. Mix wet ingredients into dry.
  3. With damp hands, pinch off a piece of the mixture and form into small balls.
  4. Place onto a parchment lined baking tray and press down with a fork.
  5. Bake at 180/360° for 10-12 minutes until golden.
  6. Cool on a baking rack and serve.
