It is one of the most requested dinners in my house, and it’s a fantastic one to make on a Sunday, leaving plenty of leftovers for the week.

Lentils are cheap, cheerful, and an excellent source of healthy protein. Most families will have curries on their dinner menu, so this lentil curry from Simple Vegan Blog is a really simple swap for the traditional one made with meat.
This recipe does include coconut milk which can always be replaced for a single cream (I use Alpro) if you don’t like coconut flavours.

We love this vegan shepherd’s pie from The Simple Veganista because of the 10 minute prep time. This winter warmer is bursting with a variety of vegetables to keep immune systems fighting fit. It is a versatile dish which allows you to throw whatever veggies you have in the fridge, or even swap the white potatoes for sweet potatoes instead.

Lasagna is the ultimate comfort food, and making it vegan is easy. You won’t miss the meat in this dish as it is packed full of flavour.
